Dessert Sushi Recipe

Yield: 12-16 piecesPreparation Time: 30 minutesCooking Time: 20 minutes

Ingredients

For the Sweet Rice Base:

  • 1 cup sushi rice

  • 1 ¼ cups coconut milk (or almond milk for a lighter version)

  • 3 tbsp sugar

  • 1 tsp vanilla extract

For the Fillings and Toppings:

  • Fresh fruit: mango, strawberries, kiwi, banana, blueberries

  • Sweetened cream cheese or mascarpone (optional)

  • Chocolate or caramel sauce (optional)

  • Sweet rice paper or soy wrappers

  • Toasted coconut flakes or sprinkles

For Garnish:

  • Edible flowers (optional)

  • Shredded dark chocolate

Instructions

  1. Cook the Sweet Rice Base:

    • Rinse the sushi rice until the water runs clear.

    • In a pot, combine the rice, coconut milk, and sugar. Bring to a boil, then reduce the heat and cover. Simmer for 15 minutes or until the liquid is absorbed.

    • Remove from heat, stir in vanilla extract, and let the rice cool completely.

  2. Prepare the Fillings:

    • Slice fruits into thin strips or small cubes.

    • If using sweetened cream cheese or mascarpone, ensure it’s soft and spreadable.

  3. Roll the Sushi:

    • Lay a piece of sweet rice paper or soy wrapper on a clean surface. Spread a thin layer of the sweet rice across the wrapper, leaving about an inch uncovered at the top.

    • Arrange fruit and optional fillings horizontally across the center of the rice.

    • Roll tightly, using water to seal the edges of the wrapper.

  4. Slice and Serve:

    • Use a sharp knife to slice the rolls into bite-sized pieces.

    • Drizzle with chocolate or caramel sauce, and sprinkle toasted coconut flakes or sprinkles on top.

Creative Variations

  1. Chocolate Banana Roll:

    • Fill with banana slices and drizzle with chocolate sauce. Garnish with shredded chocolate.

  2. Tropical Delight Roll:

    • Fill with mango, kiwi, and pineapple. Top with toasted coconut flakes.

  3. Berry Bliss Roll:

    • Fill with strawberries and blueberries, and add a touch of sweetened cream cheese.

  4. Matcha Roll:

    • Mix a teaspoon of matcha powder into the rice for a green tea flavor and color. Fill with red bean paste and top with a dusting of matcha powder.

Tips for Success

  • Texture Matters: Make sure the rice is fully cooled before rolling to ensure the wrappers don’t tear.

  • Sharp Knife: A sharp knife is essential for clean cuts. Wipe the blade between slices for the best results.

  • Presentation: Use garnishes like edible flowers or chocolate shavings for a polished look.
