Artichoke Bliss Sushi Roll Recipe

Ingredients

For the Sushi Rice:

  • 1 cup sushi rice

  • 1 ¼ cups water

  • 2 tbsp rice vinegar

  • 1 tbsp sugar

  • ½ tsp salt


For the Roll:

  • 1 sheet of nori (seaweed)

  • ½ cup canned or jarred artichoke hearts, drained and chopped

  • ½ avocado, sliced

  • 1 small cucumber, julienned

  • 1 small carrot, julienned

  • 1 tbsp vegan mayo or hummus (optional)


For Garnish:

  • Sesame seeds (black or white)

  • Microgreens or sprouts

  • Soy sauce and wasabi for serving


Instructions

  1. Prepare the Sushi Rice:

    • Rinse the sushi rice thoroughly until the water runs clear.

    • Cook the rice with water in a rice cooker or on the stovetop according to package instructions.

    • In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir the mixture into the cooked rice. Allow the rice to cool to room temperature.

  2. Prepare the Ingredients:

    • Drain and chop the artichoke hearts into small pieces.

    • Slice the avocado, julienne the cucumber and carrot, and set them aside.

  3. Assemble the Roll:

    • Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    • Spread a thin layer of rice evenly over the nori, leaving a 1-inch border at the top.

    • Spread a thin layer of vegan mayo or hummus over the rice (optional).

    • Place the chopped artichoke, avocado slices, cucumber, and carrot in a horizontal line across the center of the rice.

  4. Roll the Sushi:

    • Lift the edge of the bamboo mat closest to you and begin rolling the nori over the fillings, applying gentle pressure to create a tight roll.

    • Seal the roll by moistening the uncovered edge of the nori with water and pressing it to close.

  5. Slice and Serve:

    • Use a sharp knife dipped in water to slice the roll into 8-10 pieces.

    • Garnish with sesame seeds and microgreens, and serve with soy sauce and wasabi on the side.
