Ingredients

1 cup sushi rice

2 tbsp rice vinegar

½ avocado, sliced

1 small carrot, julienned
1 tbsp vegan mayo or hummus (optional)

Instructions
Prepare the Sushi Rice:
Rinse the sushi rice thoroughly until the water runs clear.
