Choux pastry (pâte à choux) dates back to the 16th century and has been a cornerstone of French patisserie. This unique dough is cooked before baking, allowing it to create a hollow shell that can be filled with various creams and custards. The addition of matcha, a finely ground Japanese green tea powder, adds an Asian-inspired twist to this beloved dessert.



Step-by-Step Recipe: Matcha Cream Puffs


Ingredients

For the Choux Pastry:

  • 1/2 cup (120ml) water

  • 1/2 cup (120ml) whole milk

  • 8 tbsp (113g) unsalted butter, cut into cubes

  • 1 tbsp (12g) granulated sugar

  • 1/4 tsp salt

  • 1 cup (125g) all-purpose flour

  • 4 large eggs, at room temperature


For the Matcha Pastry Cream:

  • 2 cups (480ml) whole milk

  • 4 large egg yolks

  • 1/2 cup (100g) granulated sugar

  • 1/4 cup (30g) cornstarch

  • 2 tbsp (15g) matcha powder

  • 2 tbsp (28g) unsalted butter

  • 1 tsp vanilla extract


For the Matcha Glaze (Optional):

  • 1 cup (120g) powdered sugar

  • 1-2 tbsp (15-30ml) milk

  • 1 tsp matcha powder


Instructions

Step 1: Preparing the Choux Pastry

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a saucepan over medium heat, combine water, milk, butter, sugar, and salt. Stir until butter is fully melted.

  3. Reduce heat to low and add flour all at once. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan (about 2 minutes).

  4. Remove from heat and let the dough cool for 5 minutes.

  5. Add eggs one at a time, mixing thoroughly after each addition, until the dough is smooth and glossy.

  6. Transfer dough to a piping bag fitted with a round tip and pipe 1.5-inch rounds onto the prepared baking sheet.

  7. Bake for 25-30 minutes or until golden brown and puffed.

  8. Remove from oven and pierce each puff with a skewer to release steam. Cool completely before filling.


Step 2: Making the Matcha Pastry Cream

  1. Heat milk in a saucepan until just simmering.

  2. In a separate bowl, whisk together egg yolks, sugar, cornstarch, and matcha powder until smooth.

  3. Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.

  4. Return mixture to the saucepan and cook over medium heat, whisking constantly, until thickened.

  5. Remove from heat and stir in butter and vanilla extract.

  6. Transfer to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and chill for at least 2 hours.


Step 3: Filling the Cream Puffs

  1. Transfer the chilled matcha pastry cream into a piping bag fitted with a small round tip.

  2. Carefully poke a hole in the bottom of each cream puff and pipe in the matcha cream until filled.


Step 4: Adding the Matcha Glaze (Optional)

  1. In a bowl, whisk together powdered sugar, matcha powder, and milk until smooth.

  2. Dip the tops of the filled cream puffs into the glaze or drizzle over the top.

  3. Allow glaze to set before serving.

  • Consistency of Dough: The choux pastry should be smooth and thick enough to hold its shape when piped.

  • Even Baking: Avoid opening the oven door too soon, as this can cause the puffs to collapse.
